Practice tomorrow. Gnocchi tonight.

Gotta be fueled up for 2am practice, so we're staring hearty.

We usually do these precious potato pillows with a cheese sauce, but I found this recipe for gnocchi with bolognese sauce and we're loving it.

Meaty and tangy tomato-based sauce is a perfect complement for the chewy, doughy morsels.

Season it with fresh spices to round out the flavor.


Next time I might try making the gnocchi pillows from scratch, but it you're cooking the gnocchi from the package, we've found that Barilla pre-cooked in the bag make are the favorites. Soft, dense but not too chewy.


We're not sure if we're staying up for or waking up for it, but we are going to need energy for practice session 1 at 2am Southern California time. This dish should do.
